In 1861 the 18 year old Eliza was a children's maid working for the Garston family in Bath Street, London. Ten years later she was in service working for a Charles Barry at 1 Sandringham Villas, Lewisham. The 1881 Census finds Eliza, aged 36, working as a cook in the household of Daniel and Emily Birkett and their brother-in-law Henry Soames plus four other servants at East Hall Orpington Kent, and in 1891, still unmarried at the age of 47, she was working as a cook/general servant to an elderly Julia Washington Hibbert at 12 Hill Street, St George Hanover Square. By 1901, however, Eliza had joined forces with her sister Margaret in running a boarding house at 66 Talbot Road Paddington. They had a servant interestingly called Emeline Coe, aged 18, born in Glamorganshire.
